Plant Based Roast Vegetable Curry

Even though we enjoy ourselves some good meat and dairy, we’ve got family members who choose not to eat those things, and I still want to wow their socks off when I feed them! I use my excalibur dehydrator which dries things very evenly and quickly, if you have another one, you may need to swap around trays, or lay it out a little thinner, or it may need to go a bit longer.
