Basic Beginner pancakes for Kids

- 2 eggs, beaten
- 1 cup milk non dairy milk if needed
- 2 tablespoons olive or sunflower oil sub melted butter/coconut oil
- 1 ¼ cup all purpose flour sub whole wheat/pastry flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- Pinch salt
Beat together eggs, milk and oil.
Add flour on top of wet, dont mix it in yet.
Add sugar, baking soda and salt on top of flour pile, mix gently into the flour with spoon/your finger.
Gently mix the dry ingredients into the wet.
Heat a griddle or frying pan to medium heat. Add butter or oil to grease.
Spoon 2 tablespoon size dollops of batter onto the hot pan, flip with tiny bubbles form around edges.
When pancakes spring back when gently pressed, they are ready to take off the pan.
Serve with maple syrup, jam, yogurt, fruit, whatever your heart desires!
