Mix apples and sourdough starter in a medium sized bowl. Start on the low end of the starter and add more if needed so that all the apples are nicely surrounded.
Sprinkle with sugar, salt and cinnamon. Mix well.
Make sure the baking soda has no clumps (I usually measure it into my hand and then press the clumps with the back of my measuring spoon) and sprinkle over the surface of the batter.
Mix until well combined and set aside to rest.
In a heavy bottom pot or high sided skillet over medium heat, heat 1" of tallow, lard, coconut oil, sunflower oil or your frying oil of choice.
Heat the oil to approx 350F, or when a drop of dough dropped into the hot oil immediately rises and starts bubbling.
Scoop 2 tablespoon sized scoops into your hot oil, leaving space between so they dont connect together.
Let cook 1-2 minutes, until the edges start to brown, gently loosen the bottom off the bottom of the pot if its stuck, and flip.
Cook another 1-2 minutes, until the other side is evenly browned.
Remove from heat with a slotted spoon or tongs to paper towel, newspaper or an old towel.
Put another batch in to fry and immediately sprinkle finished fritters with cinnamon sugar or icing sugar.
