Maple Mint Mojito Cocktail

Sweetened with maple syrup, you can make this cocktail virgin by simply omiting the rum.

Ingredients
  

To make the base-

  • 1 cup ice
  • 1 lime, juiced sub for 2-3 tablespoon bottled lime juice
  • 1 handful mint
  • ½ cup white rum sub for spiced rum or just omit for virgin cocktail
  • Pinch salt
  • cup maple syrup

To Serve

  • 1 lime, quartered
  • Soda water/fizzy water, chilled
  • Ice
  • Frozen fruit such as strawberries, blackberries, cherries or mango optional

Instructions
 

  • Measure all the makings for the base into a quart jar. Shake well, until the mint leaves are all beat up.
  • Strain it out into a pint jar. Store in fridge until ready to use.

To Make a Cocktail

  • In a half pint jar (250ml/4oz), put 2-3 ice cubes, approx ¼ cup of the base, squeeze a ¼ wedge of lime and top it all off with soda water.
  • If omitting rum, you will be using less of the base per cocktail.
  • Drink up and enjoy!
