Maple Mint Mojito Cocktail

Sweetened with maple syrup, you can make this cocktail virgin by simply omiting the rum.

To make the base-
- 1 cup ice
- 1 lime, juiced sub for 2-3 tablespoon bottled lime juice
- 1 handful mint
- ½ cup white rum sub for spiced rum or just omit for virgin cocktail
- Pinch salt
- ⅓ cup maple syrup
To Serve
- 1 lime, quartered
- Soda water/fizzy water, chilled
- Ice
- Frozen fruit such as strawberries, blackberries, cherries or mango optional
Measure all the makings for the base into a quart jar. Shake well, until the mint leaves are all beat up.
Strain it out into a pint jar. Store in fridge until ready to use.
To Make a Cocktail
In a half pint jar (250ml/4oz), put 2-3 ice cubes, approx ¼ cup of the base, squeeze a ¼ wedge of lime and top it all off with soda water.
If omitting rum, you will be using less of the base per cocktail.
