Jessica's Dairy-Free "Cheese" Sauce

The following recipe for “cheese” sauce can be used in many ways. Add it to cooked noodles for macaroni and “cheese”. Use it as a dipping sauce for corn chips. You can even use it to top baked potatoes. Enjoy it anywhere you would normally use a melted cheese sauce.

Ingredients
  

  • 2 cups pureed butternut squash or pumpkin
  • 2 cups cooked garbanzo beans undrained
  • ¼ cup nutritional yeast
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon paprika

Instructions
 

  • Put all ingredients into food processor.
  • Blend until the beans are completely smooth and creamy.
  • Add sauce to cooked noodles or transfer to a bowl for dipping.
  • Can be made ahead and stored in the fridge until later use.

  • Makes 1 quart.
