Ingredients
  

  • 1 cup olive oil
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup water or milk alternative
  • 1 teaspoon vanilla extract
  • Fresh or frozen fruit berries or sliced stone fruit or apples

Instructions
 

  • Pour olive oil into a baking dish.
  • Combine sugar, flour, baking powder, and salt in a mixing bowl.
  • Add water or milk alternative and vanilla extract to the dry ingredients to combine.
  • Pour mixture over the oil in the baking dish.
  • Add frozen or fresh fruit to the top of the batter.
  • Bake on 350 for 30-35 minutes.
