Sourdough Brown Bread

Ingredients
  

  • 400 grams sourdough starter
  • 50 grams molasses
  • 420 grams warm whole milk or water
  • 40 grams melted butter or use avocado or olive oil
  • 500 grams unbleached all-purpose flour
  • 300 grams fresh ground whole wheat hard red or white wheat berries
  • 20 grams unsweetened cocoa powder
  • 15 grams salt

Instructions
 

  • Mix starter, molasses, water, and oil of choice and stir well. Add in flours, cocoa, and salt. Mix until just combined, then let autolyze 20-30 minutes. Get your hands wet and knead until smooth.
  • Let rise until doubled in size. Cut into two equal pieces.
  • Shape into two loaves by patting into a rectangle. Then roll up from the short end and tuck ends under. Place in loaf pans and cover.
  • Let rise until 1 ½ times in size then preheat oven to 450°F.
  • Bake for 20 minutes, then rotate pans and bake another 15 minutes. Remove when they have an internal temperature of 180°F.
  • Remove from pans and wrap in clean tea towels to cool on a rack.

Notes

  • Always grind your own wheat for true whole grains.
  • Allow the dough to rest before continuing with the process so that the whole wheat fully hydrates.
  • Covering/wrapping the bread in towels during cooling keeps the crust nice and soft.
