Air Fryer Pumpkin

The air fryer is great for giving you lots of texture without excessive oil. Air fryer pumpkin is the perfect side dish for fall!

Ingredients
  

  • 1 small pumpkin or winter squash, about 3 pounds
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon spices see notes

Instructions
 

  • You can keep the skin on or peel before slicing if desired.
  • Cut pumpkin in half with a large sharp knife. Clean out guts with a spoon and save seeds for roasting if desired.
  • Slice and cube the pumpkin into ¾ to 1 inch pieces.
  • Preheat air fryer to 385°F.
  • Add the chopped pumpkin to a large bowl and add the oil, salt, and chosen spice. Mix thoroughly in bowl.
  • Spread out in air fryer basket or sheet in a single layer. Cook for 20 minutes or so, just as the edges are starting to brown. Make sure to shake halfway through and keep an eye on it toward the end.
  • Let rest a few minutes before tasting, and add more seasoning if desired.

Notes

Spices to try: cinnamon, pumpkin spice, garlic powder, paprika, or chili powder.
This can go sweet or savory.
Try stirring into risotto, oatmeal, or other side dishes.
