The air fryer is great for giving you lots of texture without excessive oil. Air fryer pumpkin is the perfect side dish for fall!

Roasted squash is a great side dish the entire family will enjoy. It's super soft with crispy edges, and the skin gives you so many nutrients.

Oil - Although we are using an air fryer, we still need a touch of oil.
Seasoning - You can go sweet or savory here, depending on how you will eat the pumpkin.

Step 1: Peel if desired, remove seeds, and slice.
Step 2: Cut slices into cubes.

Step 4: Add to air fryer in single layer and cook until tender.

A "sugar pumpkin" is what smaller, edible pumpkins are called. You can also use any sort of winter squash like acorn, butternut, kabocha, and more! Just check out what your farmer's market has and you'll be in business. You can also double check if the peel is edible (or tasty!) like acorn squash can be eaten when roasted as it's softer, but generally you don't eat butternut peel. It is mainly personal preference.
It is a delicious side on its own, but it can easily be cooled and added to salads as a topping. Try stirring into rice or stuffing at dinner. Make it sweet with cinnamon and stir it into your morning oats! The sky really is the limit here, depending on how you season it.

Air Fryer Pumpkin
Ingredients
- 1 small pumpkin or winter squash, about 3 pounds
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon spices see notes
Instructions
- You can keep the skin on or peel before slicing if desired.
- Cut pumpkin in half with a large sharp knife. Clean out guts with a spoon and save seeds for roasting if desired.
- Slice and cube the pumpkin into ยพ to 1 inch pieces.
- Preheat air fryer to 385ยฐF.
- Add the chopped pumpkin to a large bowl and add the oil, salt, and chosen spice. Mix thoroughly in bowl.
- Spread out in air fryer basket or sheet in a single layer. Cook for 20 minutes or so, just as the edges are starting to brown. Make sure to shake halfway through and keep an eye on it toward the end.
- Let rest a few minutes before tasting, and add more seasoning if desired.
Notes
This can go sweet or savory.
Try stirring into risotto, oatmeal, or other side dishes.
