Banana Cream Popsicles

Orange juice, bananas, and cream make for an excellent cold dessert when summer temps soar! You'll love the texture of frozen banana.

Ingredients
  

  • 3 medium bananas
  • 2 ½ cups orange juice
  • ½ cup heavy cream see notes
  • Splash vanilla extract
  • Pinch salt

Instructions
 

  • Cut bananas in half, then half again lengthwise.
  • Use a popsicle stick to measure the height of one of the reservoirs.
  • Cut each banana to that height, so that the bananas aren’t sticking up because they will float a little. You want to be able to put the mold lid/top on in order to make the popsicles straight.
  • Insert the popsicle stick into the banana. It doesn’t need to/ shouldn’t follow the curve.
  • Mix together remaining ingredients and whisk well.
  • Put a banana into each mold section and fill with liquid ingredients.
  • Freeze.

Notes

  • DO NOT use milk in place of heavy cream. It will curdle and look awful.
  • You CAN use almond milk or coconut milk in place of the cream to make these dairy-free.
