Start your fire and make a nice bed of hot coals. You can also use charcoal (20-24 briquettes) if you decide to cook on a bbq. Consider making after the burgers or whatever you’ve been cooking is finished.
With pie iron open, spray the iron on both sides liberally with oil, or apply a fat that will not easily burn.
Lay out each piece of bread on the pie iron. If you have a larger pie iron you can cook up to 2 or 3 pies at a time.
Spread your jam on each piece of bread to desired amount.
Add your marshmallows now and carefully tuck in chocolate chips.
Add your freshly picked berries (we used blackberries), also placing them carefully aside the chocolate chips.
Make sure the inside top of the pie iron is oiled. You can also spritz on some oil atop the bread if you really don’t want your pie to stick to the pie iron.
Clamp the top of the pie iron down and make sure it is fastened. You can cut off any excess bread crusts if you wish at this point…it’s easier to do before they get scorched.
When coals are hot and the fire has died down somewhat you are ready to cook. You can cook over the flames if they are not too hot, but be forewarned that it is easy to burn your pies if fire is too high and you are not tending to your pie iron frequently.
Patience is the name of the game. Cook on each side 3-5 minutes at a time then flip. It may take 2 or 3 rounds of this as it depends on the heat from the fire. You can take a sneak peek to make sure the bread is crisping and not burning as well as seeing if the pie is sticking. If it is you can carefully use a bread knife to loosen it from the iron, trying not to break it apart.
When you are satisfied both sides are crisped and your pie ingredients are sufficiently baked/melted, pull the iron off the coals and slowly open. If there is more sticking, use the butter knife again to keep pie halves intact and your pie puff whole and place on a plate to cool. Ingredients will be very hot!
