Chicken Foil Packs

Summer brings warm weather and cooking out on the grill! Chicken foil packs are perfect because you can assemble early and cook later!

Ingredients
  

  • 2 lb chicken breast cut into 6-12 even pieces
  • 2 lb potatoes diced into ½” pieces, smaller is better for even cooking
  • 3 ½ cups green beans canned or fresh
  • 1 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • ½ tablespoon paprika
  • 2 teaspoons salt
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • ½ teaspoon black pepper
  • 3 tablespoons avocado oil

Instructions
 

  • Mix spices together in a small bowl.
  • Coat chicken with 1 tablespoon oil and ? of the spices; let rest for at least 30 minutes.
  • Add 1 tablespoon oil and half the remaining spices to the potatoes, and then to the green beans.
  • Layer ingredients onto strips of aluminum foil, putting potatoes on the bottom, followed by chicken, and topped with green beans. This order allows the ingredients that take longer to cook to be closer to the heat.
  • Fold foil lengthwise together, bring up sides and then roll down/fold together (see photos in post).
  • Grill packs over medium heat for 40-60 minutes, checking the temperature of chicken for doneness (165°F) and tenderness of potatoes.

Notes

  • Make sure and use heavy duty foil so you can easily wrap and cook without tearing.
  • You can also tuck these into hot coals in a campfire for easy backyard cooking.
