Chocolate truffles are super easy to make and look impressive. Whether for Christmas or an afternoon treat, grab the cocoa and go.

- 225 grams high quality dark chocolate 60-70%
- 1 cup coconut milk room temperature
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
On low heat, add chocolate pieces to a small sauce pan.
As chocolate starts to melt, add in coconut fat/milk and stir together gently.
When melted together, remove from heat and add vanilla extract.
Let mixture cool to room temperature for about 15 minutes.
Refrigerate for an hour until the chocolate mix is ready to scoop and roll.
Scoop about 1 tablespoon into a ball and roll. Place on a plate or tray and repeat for remaining chocolate.
In a shallow bowl, add cocoa powder and roll each ball into the powder until fully covered.
Plate for immediate consumption or place in a container and refrigerate for up to 2 weeks.
- You can also freeze truffles for long term storage, though the cocoa powder might soak in some.
- Try adding a hazelnut inside the filling of each candy!
- Use the canned coconut milk. Make sure it is room temp, and stir it to combine the fat and milk before scooping out what you need.
