Chocolate truffles are super easy to make and look impressive. Whether for Christmas or an afternoon treat, grab the cocoa and go.

We love easy treats around here! Do I sometimes hide these as "grown up treats"? You bet! They are made from dark chocolate so honestly the younger kids don't care for them anyway.
You can make easy treats all day long, and get the kids to help as well. They can stir up some Popcorn Cake they can enjoy for themselves. Keep a jar of Hot Chocolate Mix in the pantry so everyone can get a chocolate fix. It's also perfect for gifting.
Key Ingredients

Chocolate - I like a good dark chocolate, generally in the 60-70% range.
Coconut Milk - The can, not a "drink."
Vanilla - We like to use Homemade Vanilla Extract. I think if you've made it with rum it really adds something here!
Cocoa Powder - This will keep the truffles from sticking together.
How to Make Homemade Truffles

Step 1: Add chocolate to a saucepan on low.
Step 2: Stir to melt without burning, and stir in the coconut milk. Remove from heat and stir in vanilla.


Step 3: Cool and then refrigerate to set.
Step 4: Scoop filling and roll into balls, then coat in cocoa powder.
FAQs
Go for it! Try out whatever extract you have on hand. Orange or peppermint would be fantastic instead of the vanilla. You can also press a small nut, like a hazelnut, into the center of each truffle. Try adding very finely chopped nuts to the cocoa powder as well, or toasted coconut.
I love to use a cookie scoop, or if you have a melon baller on hand you can use that as well. And seriously no special equipment is needed, just go ahead and cut and roll it as well. We aren't fancy here, even though this can feel like a fancy treat!
These are best stored in the fridge, especially if you are making them in summer or have a warm kitchen. Since the wood stove and all our cooking keeps us pretty warm, I definitely keep these chilled. You can also freeze them for the future!

Healthy Chocolate Truffles
Ingredients
- 225 grams high quality dark chocolate 60-70%
- 1 cup coconut milk room temperature
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
Instructions
- On low heat, add chocolate pieces to a small sauce pan.
- As chocolate starts to melt, add in coconut fat/milk and stir together gently.
- When melted together, remove from heat and add vanilla extract.
- Let mixture cool to room temperature for about 15 minutes.
- Refrigerate for an hour until the chocolate mix is ready to scoop and roll.
- Scoop about 1 tablespoon into a ball and roll. Place on a plate or tray and repeat for remaining chocolate.
- In a shallow bowl, add cocoa powder and roll each ball into the powder until fully covered.
- Plate for immediate consumption or place in a container and refrigerate for up to 2 weeks.
Notes
- You can also freeze truffles for long term storage, though the cocoa powder might soak in some.
- Try adding a hazelnut inside the filling of each candy!
- Use the canned coconut milk. Make sure it is room temp, and stir it to combine the fat and milk before scooping out what you need.
