Grease 10-inch round springform or cake pan. Optionally line the bottom with parchment paper and grease.
Preheat oven to 350°F.
In a large bowl mix dry ingredients: flour, baking powder, salt and set aside.
In a food processor or mixer, cream butter until light and fluffy.
Add the honey and sugar and mix for 3 minutes on medium speed.
Add vanilla incorporate eggs one at a time, scraping down mixing bowl with spatula as needed and mix for another minute.
Slowly incorporate flour mix and buttermilk on low speed, and stop with mixer just before it is all incorporated. Finish mixing by hand.
Pour batter into prepared pan and bake for approximately 35-40 minutes, testing with a toothpick at 30 minutes to see if comes out clean.
Set aside to cool for 20 minutes before removing from pan (if desired) to cool completely.
Icing:
Use a mixer to cream butter with salt until light and fluffy.
Add icing sugar slowly on low.
Add vanilla and cream, mixing well on medium speed for 2-3 minutes, scraping down mixing bowl with spatula as needed. If too stiff add a bit more cream and mix for another minute.
Frost cake.
Add shaved chocolate, a drizzle of berry sauce, or crushed walnuts on top for additional yum!
Notes
Always cool cake completely before frosting.
Skip the frosting and add a drizzle of honey to each serving instead.
