A sweet and fluffy honey cake topped with whipped buttercream frosting. This sturdy cake is perfect for any celebration.

Honey is just so delicious. We sometimes have bees in the yard but sometimes they have been too much trouble with bears. We definitely purchase local honey by the bucket! It's a great way to naturally sweeten your treats.
Honey is the star in Honey Cardamom Cookies, and I also perfected the art of Honey Cut Out Cookies. When the weather warms, don't forget to add it to your cold drinks, especially 5-Minute Lemonade.
Key Ingredients
Flour - When I'm not grinding my own wheat berries, I keep organic unbleached flour around. It acts just like regular AP but is a little less processed.
Honey - You can't get the flavour without this! Yes, it can feel expensive, but the taste is worth the treat.
Eggs - An abundance of eggs gives us a light and fluffy texture.
Buttermilk - Cultured buttermilk adds a tang to offset the sweetness of the honey.
Frosting - A quick buttercream frosting is the perfect finishing touch!
How to Make Easy Honey Cake

Step 1: Whisk together dry ingredients and set aside.
Step 2: Cream butter.
Step 3: Incorporate eggs one at a time with remaining wet ingredients.
Step 4: Alternate adding flour and buttermilk and finish mixing by hand.
Step 5: Spread batter in prepared pan.
Step 6: Bake until golden; then let rest for 20 minutes before removing from the pan.
FAQs
I suggest a quick buttercream icing if you are going all out, especially for a celebration. If you want to add chopped nuts or berries this is a great way to "glue" them on. You can also do a simple drizzle of honey as you serve each slice. Blackberry Glaze would pair nicely and give a good colour contrast.
I don't recommend that. In my testing, the cake really needs the granulated sugar as well to achieve the best texture. Honey also browns really easily, and you risk the cake burning before it cooks through. When I'm making a true treat for the family I don't concern myself with mixing in "regular" sugar. I like to use organic cane sugar as my best option.
I like how the batter bakes in a 10-inch round pan. If you want to be able to easily remove it from the pan, add a round of parchment to the bottom of the pan and grease it as well. That way you should be able to easily overturn the pan and remove the cake. Many people have a springform pan in the cabinet, and that is more likely to be 10 inches than your standard round glass cake pan, which is typically 8-9 inches. Feel free to adjust your pan size but check the cake sooner and keep an eye on it.

Honey Cake
Ingredients
Cake:
- 3 cups all-purpose flour 400 grams
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup butter
- 1 cup honey
- 1 cup granulated sugar
- 1 tablespoon vanilla
- 4 large eggs
- 1 cup buttermilk
Icing:
- 1 cup unsalted butter
- ¼ teaspoon salt omit if using salted butter
- 2 cups icing sugar
- 2 teaspoons vanilla
- ½ cup half and half more as needed
Instructions
Cake:
- Grease 10-inch round springform or cake pan. Optionally line the bottom with parchment paper and grease.
- Preheat oven to 350°F.
- In a large bowl mix dry ingredients: flour, baking powder, salt and set aside.
- In a food processor or mixer, cream butter until light and fluffy.
- Add the honey and sugar and mix for 3 minutes on medium speed.
- Add vanilla incorporate eggs one at a time, scraping down mixing bowl with spatula as needed and mix for another minute.
- Slowly incorporate flour mix and buttermilk on low speed, and stop with mixer just before it is all incorporated. Finish mixing by hand.
- Pour batter into prepared pan and bake for approximately 35-40 minutes, testing with a toothpick at 30 minutes to see if comes out clean.
- Set aside to cool for 20 minutes before removing from pan (if desired) to cool completely.
Icing:
- Use a mixer to cream butter with salt until light and fluffy.
- Add icing sugar slowly on low.
- Add vanilla and cream, mixing well on medium speed for 2-3 minutes, scraping down mixing bowl with spatula as needed. If too stiff add a bit more cream and mix for another minute.
- Frost cake.
- Add shaved chocolate, a drizzle of berry sauce, or crushed walnuts on top for additional yum!
Notes
- Always cool cake completely before frosting.
- Skip the frosting and add a drizzle of honey to each serving instead.
