Equipment

Ingredients
  

  • 3 tablespoons honey
  • 3 tablespoons hot water
  • 2 lemons
  • 4 oz white tequila
  • 3 - 4 drops bitters optional
  • 2 cups ice divided
  • Soda water optional

Instructions
 

  • In a quart jar, add the honey and hot water, and stir to dissolve. Juice lemons into the jar and add the spent rinds as well.
  • Measure in the tequila and bitters. Add 1 cup of ice, put a lid on the jar and shake well for10-15 seconds
  • In 2 pint jars, add ½ cup of ice, and divide the shaken drink between the two jars, using the lid to hold back the solids. If wanted, add soda water to top up the jars. Enjoy!

Notes

  • Sip slow without adding anything else, or make a fun fizzy, refreshing summer drink by topping off with soda water.
  • I highly recommend using fresh lemons but the bottled juice will work as well (about 4 oz).
