Make this easy honey lemon cocktail for date night in or a pitcher for a party. Tequila honeybee is smooth and just the right balance.

My husband Marius started making this drink a couple years ago and we enjoy the freshness and honey-ness of it! Itโs not a complicated cocktail and you can easily make a jug if youโre serving to a party. In summer we like to add soda water to make it a larger refreshing drink; versus in the winter, served just over ice, by the woodstove, is just the ticket.ย
Another great drink for sipping is a Honey Margarita. It's perfect to slowly enjoy as it's shaken, not frozen. And if you're already squeezing lemons, may as well make Honey Sweetened Lemonade for the kiddos! It's also great with soda water for a fun surprise.
Key Ingredients

Lemons - Always use fresh-squeezed for drinks because it's just so much tastier.
Tequila - I love to make drinks that encourage sipping so that the strong liquor goes a long way.
Bitters - This really adds just the right counteraction to the honey.
Honey - We prefer to use natural sweeteners but this is also how the drink gets its name!

Step 1: Dissolve honey in warm water and squeeze the lemons.
Step 2: Add tequila and bitters to the lemons.


Step 3: Add ice and a lid and give a really good shake!
Step 4: Strain out the solids and add soda water if desired.
FAQs
I will often keep a bottle of lemon juice in the fridge because sometimes fresh citrus is tricky to find here in northern Canada. I definitely use it to make lemonade and it will work here - I just think fresh is better! So if you can get fresh citrus (organic if you prefer, since we're shaking with the rinds) I highly recommend it.

Tequila Honeybee
Equipment
Ingredients
- 3 tablespoons honey
- 3 tablespoons hot water
- 2 lemons
- 4 oz white tequila
- 3 - 4 drops bitters optional
- 2 cups ice divided
- Soda water optional
Instructions
- In a quart jar, add the honey and hot water, and stir to dissolve. Juice lemons into the jar and add the spent rinds as well.
- Measure in the tequila and bitters. Add 1 cup of ice, put a lid on the jar and shake well for10-15 seconds
- In 2 pint jars, add ยฝ cup of ice, and divide the shaken drink between the two jars, using the lid to hold back the solids. If wanted, add soda water to top up the jars. Enjoy!
Notes
- Sip slow without adding anything else, or make a fun fizzy, refreshing summer drink by topping off with soda water.
- I highly recommend using fresh lemons but the bottled juice will work as well (about 4 oz).
