So many people complain that a pumpkin spice latte from the shop doesn't actually contain pumpkin. Well - I've tried making both with and without pumpkin puree and honestly? You get much more of the "pumpkin spice" take when you aren't using actual pumpkin. So maybe they're on to something!

Key Ingredients

Pumpkin Spice Syrup - Use any flavour of syrup to make your favourite latte.
Coffee - If making a latte, you need a strong espresso to show up!
Milk - We of course go for raw whole milk but you can use any type of milk you enjoy.

Step 1: Add ice to jars and add syrup.
Step 2: Pour espresso over ice.


Step 3: Top off with milk.
Step 4: Give a good stir or pop a lid on and shake!

We love the moka pot for making just a couple shots of espresso at a time. It's a time-honored method in Italy and I love that it's low-tech, no need for a fancy machine. The internet is also having a moment with Nescafe instant espressos, which is perfect in a pinch! And yes, if you have a fancy machine then by all means use it!
Simple syrups of sugar and water will last best in a jar in the fridge. You can even get fancy and find glass pump bottles, kinda like soap dispensers. I make a small enough amount to go through it in about two weeks, which is the limit I feel comfortable keeping it around. Sugar is a preservative but this is still a natural food item so just use it up in a timely manner.

Iced Pumpkin Spiced Latte
Ingredients
Pumpkin Spice Syrup
- 1 cup granulated sugar or use brown sugar
- 1 cup water
- 1 tablespoon pumpkin spice
- 1 tablespoon molasses if using white sugar
- Tiny pinch of salt
Latte
- Small handful of ice per jar
- ยฝ cup espresso hot or cold
- 3 - 4 tablespoons pumpkin spice syrup depending on sweetness preference
- 12 oz milk of choice
Instructions
Syrup
- Bring all ingredients to a simmer, let cool, and keep in fridge up to 2 weeks.
Latte
- In each jar with ice, add ยผ cup espresso, 1-2 tablespoons pumpkin spice syrup, then divide milk between the two jars. Stir or put a lid on and shake, then enjoy!
Notes
- This method works for any type of flavor, like making your own vanilla simple syrup.
- Store syrup in fridge for up to two weeks.
- Make this vegan with your choice of non-dairy milk.
