Yum, cold brew coffee and cream made into ice pops? Yes, please! The perfect grownup summer afternoon treat.

Oh yes! Mama likes her little treats in the afternoon, and these are the perfect pick me up! Obviously not if you are caffeine sensitive, but these are much less coffee than drinking a whole jar full. It's great on those hot afternoons when kids are napping or entertaining themselves.
The base is my Perfect Iced Coffee plus some sweetener and cream. Summer on a stick! Take your coffee and cream and pop them in the freezer. Then stash them in a bag for mama only. If you're dairy-free, I recommend Two Ingredient Pina Colada Pops.
Key Ingredients

Coffee - Use your favourite iced coffee or cold brew.
Cream - That's right, the good stuff from the top!
Sweetener - I love to use maple syrup in my drinks.
Finishing touch - Vanilla, salt, and cinnamon.
How to Make Cold Brew Popsicles

Step 1: Add all ingredients to a measuring cup or jar.
Step 2: Whisk or shake well to combine.


Step 3: Pour into your favourite popsicle mold.
Step 4: Add sticks and freeze!
FAQs
You can definitely try the non-dairy milk of your choice in these ice pops. Do keep in mind however, that many non-dairy milks have less fat so they will freeze harder and icier. Keep in mind that many also have added sugar so you might need less maple syrup. It's all about your preference and worth a shot! If you don't love them you can always pull them off the stick and blend to a yummy shaved ice treat.
I try and make most of my recipes hit 12 pops. It obviously depends on the size of your molds though. If you have more liquid than molds, just pop it in the fridge until your popsicles are frozen and you can re-use the mold. You can also just drink the rest if there's just a small amount left! I always use wooden sticks in my molds, not anything reusable. It's just impossible to keep track of those when kids (and adults!) take the popsicles out in the yard.

Coffee Ice Pops
Ingredients
- 1 quart coffee concentrate
- 1 cup cream
- ยผ cup maple syrup or ยฝ cup if you like
- Splash vanilla
- Pinch salt
- Pinch cinnamon optional
Instructions
- Mix all ingredients well.
- Pour into molds and pop in the freezer.
Notes
- I like to store the finished pops in a bag so I can reuse the mold right away. This way we can have lots of flavours ready in the freezer.
