Summer brings warm weather and cooking out on the grill! Chicken foil packs are perfect because you can assemble early and cook later!

I love long summer days. They certainly aren't lazy here! We do make plenty of time for fun because we love to be on the water, but summer also brings lots of animal and garden chores.
These chicken foil packs are perfect because you can prep them earlier in the day and pop them in the fridge to cook when it's time. Got kids that nap? Whip these up at that point! You can also easily pack these up for camping, and also make some Breakfast Foil Packs. Sourdough Drop Biscuits will round out the meal.
Key Ingredients

Chicken - Dice up chicken breast.
Veggies - Potatoes are nice and filling and green beans from the garden add colour.
Seasoning - We're digging out half the spice cabinet here for some amazing taste.
How to Make Foil Packets for the Grill

Step 1: Combine seasoning well.
Step 2: Chop all your ingredients and add seasoning.


Step 3: Layer potatoes on six sheets of foil.
Step 4: Top with chicken then green beans.


Step 5: Roll up the foil into a long rectangle.
Step 6: Bring both sides all the way up.


Step 7: Fold over the edges together to seal tightly.
Step 8: Pop on the grill until done!
FAQs
Reach for the heavy duty foil. I know not everyone loves cooking with aluminum but it is so convenient at times and really the only way to make these on the grill or in a campfire. There's nothing acidic in the ingredients so I don't concern myself with any leeching. Definitely use the heavy duty foil because the rolls are usually wider and they also won't tear during the rolling and cooking.
Yes! Make sure you layer the ingredients in the order given - potatoes, then chicken, then the beans. This way the ingredients that take longer to cook are closer to the heat source, which will really help. An instant read thermometer will ease your mind in knowing the chicken is cooked through (165°F).
I like them on the grill over medium heat. This can be gas or charcoal, whatever you have. You can also easily tuck them into hot coals in a campfire. Make sure you have the right tools for campfire cooking like extra long, sturdy tongs and oven mitts or gloves with long arms on them for protection.
Roll the foil up neatly and tightly, ensuring everything is sealed. Then you can place them in sturdy freezer bags to catch anything that leaks. Always put your raw meat items in their own cooler, or with ice packs and NOT loose ice. This ensures that if anything leaks it will stay at the bottom of the cooler and you can put sealed items on top of them and feel safe. We definitely take meat for camping all the time! Just be careful and aware and you won't risk any cross-contamination.

Chicken Foil Packs
Ingredients
- 2 lb chicken breast cut into 6-12 even pieces
- 2 lb potatoes diced into ½” pieces, smaller is better for even cooking
- 3 ½ cups green beans canned or fresh
- 1 tablespoon chili powder
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- ½ tablespoon paprika
- 2 teaspoons salt
- 1 teaspoon thyme
- 1 teaspoon oregano
- ½ teaspoon black pepper
- 3 tablespoons avocado oil
Instructions
- Mix spices together in a small bowl.
- Coat chicken with 1 tablespoon oil and ? of the spices; let rest for at least 30 minutes.
- Add 1 tablespoon oil and half the remaining spices to the potatoes, and then to the green beans.
- Layer ingredients onto strips of aluminum foil, putting potatoes on the bottom, followed by chicken, and topped with green beans. This order allows the ingredients that take longer to cook to be closer to the heat.
- Fold foil lengthwise together, bring up sides and then roll down/fold together (see photos in post).
- Grill packs over medium heat for 40-60 minutes, checking the temperature of chicken for doneness (165°F) and tenderness of potatoes.
Notes
- Make sure and use heavy duty foil so you can easily wrap and cook without tearing.
- You can also tuck these into hot coals in a campfire for easy backyard cooking.
