No need to go out for fast food! You can make a tray of english muffin breakfast sandwiches for a fraction of the price and feed a crowd.

I love a good bacon and egg sandwich! Maybe you grew up getting them from fast food on the weekends. Or maybe you always made your own. Either way, it's all the best parts of breakfast in a neat little package.
I might also give these a try using Overnight Oatmeal Pancakes as my bread. So delicious with a touch of maple syrup on them as well! If you're out of bacon, Maple Fennel Sausage is also perfect with eggs.

English Muffins - Use your favourite recipe or go ahead and pick up a package at the store.
Eggs - Nice and fluffy! This sandwich is all about textures.
Bacon - Fry it up however you like, from "just done" to "extra crispy."
Cheese - Aged cheddar is delicious here.

These are a perfect "use what ya go" recipe. Pick your meat and cheese based on what's on hand. Prefer over-easy eggs? Add those instead of scrambled, yum! I love tomato and avocado and even fresh basil leaves on mine. Kids can keep theirs relatively plain. Feel free to add ketchup or mustard.
Certainly! I find it can be a bit harder to reheat them through. Sometimes it works best to keep the halves separated in a container in the fridge, so you can reheat in the oven open-faced style. This will allow all ingredients to heat through evenly. If making ahead, don't add tomato or other toppings until ready to serve.

English Muffin Egg and Bacon Sandwich
Ingredients
- 6 english muffins
- Butter
- 6 slices aged cheddar
- 12 oz bacon
- 6 large eggs
- Salt and pepper to taste
- 1 tomato sliced
- Fresh basil leaves optional
- Avocado sliced, optional
Instructions
- Preheat oven to 350ยฐF.
- Slice the english muffins carefully in half and place on a baking sheet lined with parchment paper, cut sides up.
- Add a cheese slice to half of the muffins.
- Put in oven for 6-8 minutes, rotating once halfway through, and allowing the cheese to melt and muffins to toast.
- Fry up bacon and scramble the eggs as desired.
- Top muffins with bacon and eggs. Then add sliced tomatoes.
- Add some basil and avocado if desired.
- Salt and pepper to taste, close up the sandwiches, and enjoy!
Notes
- Perfect for making ahead, too! You can make these and pop in the fridge for the next day, just toast or enjoy cold.
