Sourdough Focaccia
This is our family favourite Sourdough Focaccia Bread recipe! Use it as pizza dough, making two medium-large pizzas or as focaccia bread. You can also cut the baked sourdough focaccia into squares and cut in half to make buns for sandwiches. It's a simple and versatile sourdough recipe every baker needs in their arsenal!
Ingredients
- 1 cup starter
- 2 cups water
- 2 tablespoons olive oil plus additional olive oil for drizzling
- 1 ½ teaspoon salt
- 4 cup flour any combo of white or whole wheat
- herbs of choice such as rosemary, thyme, dried onions; optional
Instructions
- Stir all of the ingredients together.
- Cover and let sit 6-24 hrs.
- Press into a parchment covered or greased half sheet pan (big cookie sheet). Drizzle a good few tablespoons olive oil on and spread around.
- Make finger indentations in top then sprinkle coarse/kosher salt and dried herb of choice on top.
- Let it rest until oven up to temperature.
- Preheat the oven to 450F.
- Bake 20-25 minutes. Then eat up!!

I've made this three times in a week. And even with having to split into smaller pans because my oven is a !toaster oven¡, I'm still getting fabulous results. Used it for sandwiches, split pieces for sandwiches and then made pizzas with them. (I didn't get the dough thin enough before baking.)
The complete ease of making and throwing in a bowl and leaving covered for up to 24 hours is great.

If i could only ever make one sourdough recipe, THIS would be it. So versatile- buns, bread or pizza crust...i try to keep a batch in the fridge so i can utilize it however suits us best. Knowing i can thaw soup and bake focaccia at a moments notice is a great plan b!

the timeline is super flexible on sourdough foccacia/ pizza dough so i prefer it over our old family standby - the rebar foccacia. The sourdough now far surpasses it with texture and tenderness too. we like thin crust so we do about 3 pizzas per recipe.

I have made this many times and we love it! I usually let it rise for 6 hours. This time I let it rise overnight. I was planning on making the foccacia around 5pm, which would be a 24 hour rise.
