These popsicles are more decadent than just "leftover smoothie pops" and will keep your family and friends cool all summer long!
Growing up, popsicles were always some sort of smoothie, frozen. But, but! There was a popsicle stand at the market that iffff you were lucky enough to get one, they had all sorts of gourmet popsicle flavours.
Once we started having kids, it was somewhere we regularly went for a treat, because it was special, and it was real food, no processed ingredients.
While my kids will eat a freezie (freeze pop, otter pop, what have you) when offered it, I won't buy them. I'm sorry, it's just flavoured and dyed sugar water. There is no nutritional value or fuel for your body in it!!

Key Ingredients
Milk and cream - I like to add a bit of cream to whole milk as it makes these really rich. The high fat content also helps them stay creamier when bit into. Higher fat also equals longer satiation for those kids who seem to always.be.hungry.
Mango chunks - Use already frozen fruit, just like you would for a smoothie. It means you have perfectly ripe fruit that will give you the best final result.
Vanilla extract - I think just a touch here (especially when homemade!) just elevates the flavour of the entire popsicle.
Maple syrup - Yes, fruit is sweet on its own, but sometimes you need just a touch of a naturally sweetener to round things out.
How to Make Mango Cream Popsicles
Step 1: Add all ingredients to the jar of a high-powered blender.
Step 2: Fill your desired popsicle mold.
Step 3: Add sticks and freeze for a few hours!
Tips and Tricks
- This recipe makes about 3 cups of "smoothie" which fills my favorite mold perfectly. Adjust if yours holds less or more (or just drink the rest!).
- We pop these out once frozen and put them in a freezer bag so we can make another flavour right away.
- Did your popsicle mold come with plastic sticks? Do yourself a favour and get rid of them - they will only get lost anyway and the wooden sticks will eventually degrade when left in the yard where children inevitably throw discard to continue playing their game.
Substitutions
Use any fruit you have. Start with blends that you know you already enjoy as smoothies.
Keep in mind that mango chunks are a medium sort of dice, and I use 2 cups total. So if you have small berries, you may want to use 1 ½ cups. Whole strawberries? Maybe aim for 2 ½ cups. Once you make these a few times, you'll get a feel for how much fruit you need.
FAQs
I find the flavour of fresh mangoes to be really hit or miss, especially up north here. But when you buy frozen, you already know it's going to be good since it's frozen at its peak. If you live where you consistently get great fresh fruit, such as Florida, then by all means use it. Just freeze it first so your mixture is the correct texture.
Absolutely! Use a creamy milk such as barista blends or cashew milk, full-fat canned coconut milk, etc. Just keep in mind that many alternatives are lower in fat than heavy cream, so your popsicles may be slightly icier. Make sure and use maple syrup or sugar and not honey to keep them vegan.

- 1 teaspoon vanilla
- 2-3 tablespoons maple syrup or honey to taste
