Pop your leftovers in the Instant Pot and you'll have a comforting white chili with beans and your Thanksgiving turkey bits!

I'm always looking for ways to make meals from what's on hand, whether that's leftovers or canned and preserved goods. This is a super affordable meal that makes a lot at once so everyone can enjoy a comforting bowl of chili.
Do you buy the biggest turkey you can find when they are on sale for the holidays? It's a great idea because after the main meal, you can make so many different options. Make sure and pick all the bits and pieces off the bones because they work so well in these recipes. Leftover Turkey Pot Pie uses ALL the meal leftovers, what fun! Turkey Rice Casserole takes a different spin and makes things gluten-free. And if you're making a bunch of easy meals, then you'll have time for Healthy Cinnamon Rolls for a breakfast treat.
Key Ingredients

Beans - I like pinto or white, but whatever you have is totally fine.
Turkey - Yup, just those bits and pieces of leftovers are all you need!
Broth - Whether you make your own from the turkey, or have chicken or veg on hand, anything goes.
Diced Chiles - I think this is what really ties everything together and makes it into CHILI instead of just a bowl of leftovers.
Seasonings - Our basics here are cumin, oregano, and paprika.

Step 1: Add everything except beans and sour cream to the Instant Pot and heat.
Step 2: Stir in the beans and sour cream, and heat more if necessary.
FAQs
If you don't have an Instant Pot or don't want to pull it out, you can absolutely make this on the stovetop. I just think it takes longer on the stove even with the Instant Pot coming to pressure! Plus throwing it in the pressure cooker is completely hands-off and will allow you to finish up the dishes, the vacuuming, or making some quick Sourdough Drop Biscuits for dinner.
Use this recipe as a framework. Any meat will do, such as ham or chicken or even sausage. Pick your flavour of broth or any type of beans you like. This is just a great way to have a ratio of ingredients on hand to make sure you aren't going too soupy or too thick.
