Do you love Thanksgiving leftovers? Easily combine all your leftovers into a turkey pot pie with homemade crust for a fresh take on dinner.

Whether or not you love turkey, there's always leftovers after Thanksgiving. Not everyone loves to eat just plain sandwiches for days on end, and wants new ideas for using up leftovers so they don't go to waste! You can choose to set some turkey aside for this purpose or just use whatever is left.
If you need more help with making and rolling a pie crust, I show all the steps in my Sourdough Pie Crust recipe. A great side to serve with this (don't forget the butter!) is Pumpkin Sourdough Dinner Rolls. Feel free to serve a salad or any sort of veggie on the side.
Key Ingredients

Turkey - Use your leftover turkey from carving and when everyone is done eating.
Pie Crust - I'll give you the recipe to make the crust on your own, but don't feel guilty if you need to use something ready made.
Veggies - I chop up a sweet potato and a couple carrots, but you can toss in any veggies from the big day such as green beans or peas.
Stuffing - One of my favourite side dishes, you can toss the leftovers in the pie!
Cranberry - Yup, add your cranberry sauce too, or serve it on the side.
How to Make Turkey Pot Pie

Step 1: Chop up a sweet potato and bake to soften.
Step 2: Soak dried stuffing or croutons or simply use cooked leftovers.


Step 3: Roll your pie crust into your pie pan.
Step 4: Add cooked turkey inside the crust.


Step 5: Top with stuffing and the carrots.
Step 6: Add cranberry and roasted potatoes.


Step 7: Add the top crust and seal.
Step 8: Slash for steam to escape and add an egg wash if desired before baking.
FAQs
This is perfect for using up leftovers, no matter what type of stuffing you served at the big meal. No leftovers? You can use a box mix or even slice up dried bread, such as our Sourdough Croutons. If your stuffing is raw/dried just soak it in warm tap water just enough to rehydrate, not need to drain.
This isn't like a traditional pot pie where you're making a roux and adding milk. Instead, it's somewhat dry - not in a bad way, just "toss everything in" kind of way. Depending on your tastes, you can pour gravy over the filling before adding a top crust, or you can simply serve it on the side. Adding the cranberry sauce in the pie is a nice touch to keep things moist, or again, just serve it on the side.

Turkey Pot Pie with Leftovers
Ingredients
Pie Crust:
- 3 cups organic unbleached all-purpose flour
- 1 cup butter cold
- 1 teaspoon salt
- 1 cup cold water
Filling:
- 1 large sweet potato
- Oil spray for sweet potatoes
- 2 cups leftover stuffing see notes
- 2 - 2 ½ pounds leftover turkey about 4 cups diced or shredded
- 3 - 4 carrots
- 1 - 2 cups cranberry sauce optional
- Salt and pepper to taste
Egg Wash:
- 1 large egg
- 1 tablespoon water
- Leftover gravy for serving
Instructions
- Pre-heat oven to 375°F.
- Break butter in to small pieces and add to flour and salt together, mixing with hands, slowly adding the water until the dough comes together in a firm but supple dough ball.
- Cover and set aside to hydrate.
- Cut carrots in thin slices and set aside.
- Peel and dice sweet potatoes into ½-inch cubes. Place on a cooking sheet and sprinkle/spray with olive oil and a dash of salt and cook in oven/toaster oven for 15-20 minutes at 375°F until soft. (You can cook your carrots here as well if you prefer a softer carrot in your pie as they will have a slight crunch if you do not.)
- Soak seasoned croutons or stuffing if using from a premade box. If you already have stuffing leftovers, you can skip this step.
- Dice or shred turkey if you haven't already; set aside.
- On floured cutting board, place your dough ball and cut one third off and set aside. With remaining ⅔rds, roll out dough in to a rough round shape until slightly larger than your large pie plate. Place into a greased pie plate and fit it to the ridges of the plate if it has some. Cut off any excess and add it to the remaining ⅓ dough and set aside.
- Start to layer your ingredients into the pie: turkey, stuffing, carrots, potatoes, cranberry sauce, sweet potatoes.
- Now roll out the remaining dough for the lid of the pie. Place on top of the ingredients and pinch together with the dough edges. Cut 4-6 slits into top for venting.
- If you are adding an egg glaze, beat egg well with water and brush overtop the dough lid.
- Add pie to the center of the preheated oven and bake until the crust starts to lightly brown on the edges, for about 40 minutes.
- When crust is lightly browned take out of oven and let rest for 5-10 minutes before serving.
Notes
- Serve with extra cranberry sauce or gravy if desired.
- This is a great way to just leave bits and pieces of turkey out for! When carving your turkey, any odd bits that you pull of the bone can be set aside for this. It will also ensure you have the leftovers you want for this!
- Use leftover (cooked) stuffing or you can also use homemade croutons or even a box mix. If using dry mix or croutons, soak in warm tap water for 10 minutes or so before using.
