Gluten-free baking doesn't have to be a struggle! Buckwheat chocolate cake is a simple recipe that can easily fit into your diet.

So many people just love chocolate! It's perfect for pairing with a simple No-Churn Vanilla Ice Cream. And you know what, this recipe is even gluten-free. That way you can feed a bunch of people from one dish.

Key Ingredients
Buckwheat - I buy the whole groats and weight and grind them into flour myself. But if you aren't grinding, or you aren't sure you'll love buckwheat, small bags of flour are generally easy to find at the grocery store.
Cocoa Powder - This is a super easy way to add chocolate flavour without excess sugar.
Milk - I always use whole milk in my baking. The fat and naturally occurring sugars really add to the finished texture.
Frosting - I go all out with homemade chocolate buttercream!
How to Make Gluten-Free Chocolate Cake

Step 1: Measure flour or grind buckwheat groats into a bowl.
Step 2: Whisk in remaining dry ingredients to remove any lumps.
Step 3: Stir in wet ingredients until smooth.
Step 4: Pour in hot water and mix.
Step 5: Pour batter into prepared pan.
Step 6: Bake until cake is done.
Step 7: Remove cake from pan and cool completely.
Step 8: Whip up frosting and add to cake.
FAQs
Yes! It's a "pseudo cereal" meaning we use it much in the same way as wheat, but it doesn't contain any wheat or gluten. It is botanically different than wheat and other grains. This means you can use it for those with gluten intolerances or allergies (just confirm with them first!).
Reach for a 1-to-1 gluten-free flour blend, or you should be able to use all-purpose flour as well. I haven't tested these extensively, but they work the same sort of way.
I love chocolate on chocolate, but you can omit the cocoa powder and go easy on the half and half until you see how it is mixing (since you removed some dry goods). You can also enjoy the cake plain, with just some powdered sugar dusted on top. It will go so well with a large glass of milk!

Buckwheat Chocolate Cake
Ingredients
Cake:
- 200 grams buckwheat groats, freshly milled or 1 cup buckwheat flour
- 40 grams cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 225 grams sugar
- 1 teaspoon salt
- 200 grams milk
- 2 large eggs
- 100 grams olive oil or melted butter or coconut oil
- 190 grams hot water
Icing:
- 1 cup butter
- ½ cup cocoa powder
- 2 cups powdered sugar
- ½ cup half and half more as needed
Instructions
Cake:
- Add flour or mill the groats into a large mixing bowl.
- Preheat oven to 320°F.
- Grease a 12x8-inch baking pan or line with parchment paper.
- Add dry ingredients to bowl of flour: baking powder, baking soda, sugar, salt and cocoa powder. Whisk well so there are no lumps.
- Add eggs, milk, and oil to dry ingredients and stir until smooth.
- Pour hot water over batter and stir in.
- Pour batter into prepared pan and bake for 40 minutes. This allows for a slower rise and more even rise. Use the toothpick test around 35 minutes.
- Let cake cool in pan for 10-20 minutes before lifting out (if desired) to cool completely.
Icing:
- With beaters or mixer, cream butter and cocoa powder until blended and smooth.
- Add icing sugar slowly on low.
- Add half and half, mixing well on medium for 2-3 minutes, scraping down mixing bowl with spatula as needed. If too stiff, add a bit more cream and mix for another minute.
- Frost cake.
- Add shaved chocolate, and a dusting of cinnamon or icing sugar on top and serve with homemade icecream for additional yum.
Notes
- I recommend whole milk in the cake.
- In Canada, I use "table cream" in my frostings. The fat content is somewhat between heavy whipping cream and half and half in the states, so feel free to use whatever you have on hand.
