We love to throw a pot of soup on in the afternoon, so that dinner is ready to go when we are. This is especially helpful if you have kids going in and out to activities or a spouse getting home late from work - soup just waits! Everyone can eat as they please and the rest stays warm.
For more comfort food, we love a good, lean Venison Meatloaf with potatoes and veggies. When we butcher our own deer we always throw all the scraps from the large cuts in a pile so we can grind them up. I've gathered all the ways I prefer to use that in my Best Ground Venison Recipes list! We also enjoy Venison Sausage Rolls as lunch or an appetizer/finger food.
Key Ingredients

Ground venison - This is super lean and perfect for soups because you don't always have excessive grease. You can use beef if you like; just drain it well or use a lean ground.
Vegetables - A good vegetable soup needs variety. I don't often see broccoli in soups, so I added it here. Potatoes are always in abundance in our root cellar, so in they go. Feel free to add carrots, celery, whatever you've got.
Broth - If you make your own wild game broth use it here, or beef is great, and even chicken. It really is adaptable.

Step 1: Add venison to a large skillet.
Step 2: Cook and stir until cooked throughout.


Step 3: Dice the veggies to fit on your spoon and saute until softened.
Step 4: Add the broth and simmer until time to eat.

We are generally able to bag a few deer each winter, so have the ground meat in abundance. A standard issue soup is also a great way to introduce your family or friends to wild game. A familiar meal with a new taste is easy to go down. But if you are fresh out, any other meat works well such as beef or even ground turkey.
I try and pair my meat with the "matching" broth, but it truly doesn't matter. Beef is certainly interchangeable with venison broth, and you can always use chicken or veg if that's what you have on hand. I also love that a soup recipe can easily be extended by using more broth or even watering it down slightly to stretch things out.
It's really easy to round out your meal with bread. Everyone loves it - feel free to go with the fall feel of cozy Pumpkin Sourdough Dinner Rolls. They are such a fun colour! Ground Venison Vegetable Soup
Ingredients
- 1 pound ground venison or lean ground beef
- 2 tablespoons olive oil or butter
- 1 large onion
- 2 potatoes
- 3 ribs celery
- 3 small sweet peppers
- 1 head broccoli
- 12 cups beef broth or however you want to stretch things
- 6 cups water
- Salt and pepper to taste
Instructions
- Brown venison in a skillet until cooked through. Set aside.
- Peel and dice onion. Chop potatoes into 1-inch pieces.
- Dice celery and peppers. Cut broccoli florets into bite-sized pieces.
- In Dutch oven or large stockpot, add oil. Once shimmering, add veggies and stir to coat. Saute until softened.
- Add venison to veggies, then pour in broth and water.
- Simmer for an hour or until ready to serve. Add salt and pepper to taste.
Notes
- Use any type of red meat here or even ground turkey.
- Use whatever veggies you have on hand. Carrots are a great addition.
- Feel free to toss in frozen peas, too.
- Any broth will work. I like venison or beef with red meat dishes but any type will work.
