What better combination than two plants that seem to "take off" on their own and are ready for harvest early in spring? Simple to whip up, keeps a long time in your fridge, or you could make a larger batch and can it for prolonged enjoyment!
As for the cocktail...I'm the first to tell you I'm not a technical mixologist. I prefer this with gin...it plays on the botanical notes and works great, but dont buy cheap gin. Try to jump up a price point (for us, cheap gin is $25-$30/26 oz bottle, try the $35-$40 range) or try another alcohol. Cheap gin is best used for cleaning toilets (I kid, but it tastes like it...) For gin we like Ungava, a Northern Quebec made gin. Alternatively, White Rum, Spiced Rum and Whiskey all work. Like I said...not technical. Our favourite Whiskey, Forty Creek, is one of the cheapest we can buy, yet its a delightful whiskey. Your best bet is to ask for a suggestion at a local liquor store if you dont know.
Normally I'd use ice cubes but this day I was out, and chose not to let that stop me, but instead show you how to make yourself a cocktail without ice!
Rhubarb and Mint Syrup
Ingredients
- 4 cups roughly chopped rhubarb fresh or frozen
- 1 cup sugar
- 1 cup water
- 3-4 sprigs fresh mint, approx 6 inches long each
Instructions
- Mix rhubarb, sugar and water in a pot on medium heat.
- Simmer until rhubarb "falls apart", about 15 minutes.
- Take off heat, push fresh mint down into the sauce, let cool until you can handle, about 30 minutes.
- Strain the syrup using a sieve or thin tea towel.
- Store in fridge.

Rhubarb Gin Cocktail
Ingredients
- 2 oz rhubarb syrup (see below for recipe)
- 1-2 oz Gin, Rum or Whiskey
- ½ oz lemon or lime juice optional
- a few ice cubes OR larger frozen fruit like whole strawberries/peach slices
- soda water, to fill your jar
Instructions
- In a pint jar, pour gin, rhubarb syrup, lemon/lime and ice/frozen fruit. Screw a liquid tight lid on and shake well.
- Fill jar up with soda water, give a stir, and enjoy!

Can this be Frozen? I'm going to a wedding at a destination (we're driving) and wanted to make this ahead of time..it's now July 23, and the wedding is August 17, and we will be away before the wedding. Today I just picked the last of the fresh rhubarb and wanted to make this recipe as my mint is also amazing!
just wanted to know how long it will keep in the fridge, or freezer, or if I can freeze my rhubarb and then use the frozen rhubarb, but, all in all, I need to make it sooner than later. Thanks
