In our house, ice cream is usually full of only nourishing things…but sometimes we get a hankering for something fun like you’d buy at an ice cream parlour and so we get to recreating it ourselves!
I used to get the kids a treat every so often at Dairy Queen in town (after an unpleasant medical appt was our tradition!), but nowadays most of us know it doesn't agree with our stomachs. Also - the last time I had just two kids with me it was $20!
When I made this the other day…I admittedly was laying in bed enjoying a bowl in the evening and all my older kids and husband came up individually to tell me how GOOD this was!
If you don't want coffee, try strawberry soft serve. I can also teach you the best no churn ice cream in case you haven't invested in a machine yet.
Key Ingredients
Dairy - This can be made with raw cream or dairy from the store!
Eggs - I use my basic ice cream base, which can have egg yolks or not, it's up to you on what you’re comfortable with (and what your chickens are laying right now!). If you decide to use egg yolks make sure you really trust the source; I’m not using random grocery store eggs here.
Coffee - I keep instant coffee granules around for things like this, because it adds a strong coffee flavour without the dilution of brewing a cup.
Sugar - Yup, ice cream needs regular old granulated sugar. Cane is fine if that's what you use in your house!
Cookies - Oreos are such a fun treat for us and I don't mind using them here to make this a real different treat! It also makes the cookies stretch further. You can also use chocolate chip or homemade cookies.
Special Equipment
The best budget option I've found is the Cuisinart Ice Cream Maker, 2-Quart. It still costs a fair bit but we have used it SO much it has entirely paid for itself.
A super splurge is the Whynter 2-Quart. I got it for my birthday and it is so fun to have something fancy that we truly use. The reason it costs more is you don't have to store the bowl in the freezer since it has its own compressor. Paying for the convenience.
Also, ice cream is something plenty of people dream of making and then they...don't...so they donate their makers to the thrift stores! You might have good luck finding a machine if you go thrifting.
This recipe is for a 2-quart machine, so I'd cut it in half if your machine is smaller. There's nothing worse than overfilling an ice cream maker!
How to Make Coffee Oreo Cookie Ice Cream

Step 1: Add egg yolks, sugar, vanilla, and coffee to a bowl. Whisk well to combine.
Step 2: Add your milk and cream and again whisk super well.
Step 3: Churn according to your machine's instructions.
Step 4: Some machines will have you add the mix-ins right in while it's running and others have you fold in later. Follow your usual instructions!
Step 5: Freeze until ready to serve.
Tips and Tricks
- Freeze your cookies before mixing in so they don't fall apart!
- Keep mix-ins bite size so they aren't too difficult to eat when frozen.
- Leave out the coffee if you prefer!
FAQs
Absolutely! I love that ice cream works really well no matter what sort of milk you use - it's simply the fat content that is key here. So you want whole milk as well as heavy cream. If your cows don't have high cream levels for you to skim off and use (alongside unskimmed milk) there's no shame in mixing store cream with your cow's milk! Or use all store-bought dairy if you don't have your own cows.
Chop, then freeze your cookies either on parchment on a baking sheet or in a baggie. I find this allows you to stir them into stiff ice cream without turning into straight crumbs. This works with cookies from the store or even homemade. Oreos and chocolate chip cookies both taste great here!

Coffee Cookies and Cream Ice Cream
Equipment
Ingredients
- ⅔ cup granulated sugar
- 1 teaspoon instant coffee
- 1 teaspoon vanilla extract
- 4 - 6 egg yolks optional
- 3 cups heavy cream
- 2 ½ cups whole milk
- 1 cup roughly chopped Oreos frozen
Instructions
- In a bowl, whisk together well the sugar, instant coffee, vanilla, and egg yolks if using.
- Whisk in cream and whole milk.
- Churn according to your ice cream maker's instructions.
- When it's firm, scoop into a container, and fold in the frozen Oreos, then transfer to the freezer until you’re ready to eat.
Notes
- You can use fresh, raw milk and cream or dairy from the store.
- Make sure you know your source if using raw egg yolks. I don't use store eggs!
