Now, my Grandma Marg was not overly known for her kitchen prowess, but there’s a couple recipes, such as her Maple Walnut Fudge, and these waffles, that have stood the test of time! I prefer to soak or sourdough waffles, but when we just need some last minute, these fit the bill. Because sometimes you just need last minute waffles.
Growing up, we were taught a little trick to baking, in which you didnt sift together the dry ingredients, or mix them separately in a bowl. Instead, you mix all your wet ingredients together, then put your flour in one pile without mixing or spreading it out on the wet ingredients, and then your smaller things like the salt and baking soda. Mix those in to your flour gently with a fork or your fingers, and then mix it all together. Saves time and dishes!
My favourite waffle maker is our hamilton beach that makes 4 decent sized waffle squares at one time. (Its not longer available or i'd link it!) This way, I can get one made, and keep the wolves at bay while the next rounds cook. I love my Oster Dura-ceramic Griddle, and they make a dura-ceramic waffle maker now that when this hamilton beach eventually dies, I'll replace it with the dura-ceramic.
Grandma Marg's Flexible Waffle Recipe
Ingredients
- 2 large eggs
- 2 cups buttermilk OR 1 cup yogurt 1 cup water/milk
- 1 teaspoon baking soda
- 2 cups flour all purpose, white, whole wheat, fresh ground, some buckwheat is good too
- ½ teaspoon salt
- 6 tablespoons olive oil OR melted butter, melted coconut oil or melted lard
- 1 cup dry curd cottage cheese optional
- Optional- chocolate chips, fresh or frozen berries (if frozen, don't thaw)
Instructions
- Beat eggs well.
- Add remaining ingredients (except chocolate/berries) and beat until smooth.
- Cook according to your waffle maker instructions, makes 4-6 waffles depending on size of waffle iron.
- If you're adding berries or chocolate chips, scoop batter into waffle maker, add a sprinkle of those, close and cook as normal.
Notes
- Even you're cottage cheese haters may not be able to detect this and it adds a good kick of protein! Don't be scared to try!
