Key Ingredients

Watermelon - Make your dice about a half an inch, just perfect for picking up with a fork.
Arugula - The spicy bite of these baby leaves is a perfect contrast to sweet fruit.
Candied Pepitas - The sweet counteracts the bite of lettuce. Feel free to use sunflower seeds, walnuts, or whatever you have on hand.
Dressing - Select a thick, creamy balsamic salad dressing.

Any salad that includes dressing should be dressed and served immediately. Things just get soggy as the dressing is absorbed into the lettuce leaves, so I don't recommend making this ahead of time or saving leftovers. It's not a huge amount so you should be able to enjoy it all at once with your family.
Depending on allergies and preferences, you can use any seed or nut as your crunchy aspect. And if arugula is too much bite for you, feel free to use baby spinach or other tender greens.

Watermelon Arugula Salad
Ingredients
- 5 cups watermelon cubed
- 3 large handfuls baby arugula
- 1 cup creamy balsamic dressing
- 1 cup candied pepitas see notes
- 1 teaspoon black pepper
Instructions
- Add all ingredients to a large bowl.
- Toss gently with tongs and serve immediately.
Notes
- Watch your ingredients - sometimes candied nuts and seeds include egg whites, or your dressing might include dairy or eggs. Just be aware of that if serving anyone with allergies.
